I want the map to reflect the workout. If I'm doing a ride with low power I don't want to be going uphill forever

I'm delighted to say that this is already fully supported. Before starting your workout, simply pick the route you wish to follow, and then you will follow it while doing the workout.
You can pick it either by selecting it from the "Ride" tab, before moving to the "Workout/Train" tab, or by selecting it from the menu that appears directly after selecting a workout (the top option is what route you'll follow).

You can already choose the route for your workout. If you select a route prior to going to the workout tab, you will ride the route selected.
Choose a flat route like the coastal loop and you’ll go further
